100g Baxters Kimchi
1 Large Baking Potato
100g Cooked Chicken Breast
10g Salted Butter
30g 1/2 Fat Crème Fraîche
30g Mature Cheddar Cheese
10g Chives
Salt
Pepper

Method:

Preheat the oven to 190c. Stab the potato with a fork to stop it exploding in the oven. Brush with olive oil and season with salt. Pop it in the oven for about an hour or until crispy.

While the potato is still hot, cut a rectangle out the top and, using a spoon, scoop out the fluffy insides. Pop into a bowl with chopped kimchi, a tablespoon of the kimchi juice, chopped chicken, sliced chives, butter, 1/2 the crème fraiche and half the cheddar. Seasons with salt and pepper to taste.

Give it a good mix until everything is incorporated and gently stuff it back inside the skin. Grate the remaining cheddar over the top and slip it back inside the oven for 10 minutes for the cheese to melt.

Serve with extra Baxters Kimchi, a dollop of crème fraiche and some chives.
