- 480 g Sirloin or Rump Steak
- 200 g Jasmine Rice (100g Cooked weight pp)
- 1 Head Lettuce
- 2 tbsp Uncooked Jasmine Rice (for toasting)
- 2 tbsp Water
- 2 tbsp Sugar
- 5 tbsp Fish Sauce
- 2 Limes
- 2 tbsp Coriander Stems
- 1 x 2cm Piece Fresh Ginger
- 1 Red Chilli
- 1 Shallot
- 25 g Thai Basil
- 2 tbsp Crispy Shallots (optional)
- 15 g Vegetable Oil
- Salt

Method
- Add 2 Tbsp uncooked jasmine rice to a dry frying pan set over a medium heat. Toast, shaking often, for 5-7 mins until golden and nutty-smelling. Let it cool, then blitz to a fine powder using a blender or grind in a pestle and mortar. Set aside.
- Add the jasmine rice to a saucepan and wash it until the water runs clear, then drain. Add 240ml water to the pan and set it over a high heat. Bring it to the boil, then pop a tight-fitting lid on, turn the heat to low and steam for 12 mins. Don’t lift the lid. After 12 mins, take the pan off the heat. Fluff the rice with a fork, cover again, and leave to steam for 10 more mins. Just before serving, fluff the rice one last time with a fork.
- Peel and finely dice the shallot. Peel and grate the ginger. Finely dice the red chilli and coriander stems. Juice both limes.
- In a small bowl (or using a food processor), mix together the water, sugar, fish sauce, lime juice, coriander stems, ginger, chilli, shallot and 1 Tbsp of the toasted rice powder. Stir or pulse until well combined, then set.
- Wash and dry the lettuce leaves, keeping them whole. Pick the Thai basil leaves.
- Season the steak generously with salt and pepper. Heat a griddle or frying pan over a high heat with a drizzle of oil. Sear the steak for 2-3 mins on each side for medium-rare, or cook to your liking. Rest for 5 mins, then slice into thin strips.
- To serve, lay out the lettuce leaves. Add a spoonful of rice, top with sliced steak, a drizzle of the dressing, Thai basil and crispy shallots. Wrap and eat with your hands.
