- 3 tbsp Fish Sauce
- 1 tbsp Sugar
- 1 tbsp Coriander Stem
- 1 tbsp Toasted Rice Powder
- 1 tbsp dried chilli powder (or less)
- Juice of 2 Limes (to taste)
- 250 g Lean Pork Mince
- 1 tsp Avocado Oil
- 2 Shallots
- 1 handful Mint
- 1 handful Coriander
- 1 handful Thai Basil
- 25 g Jasmine Rice
- To Serve:
- Lettuce or cabbage leaves to wrap
- Cucumber Slices
- Lime Wedges

Method
- Toast 25g of Jasmine rice over a medium heat until golden brown. Grind in a pestle and mortar and set aside.
- Finely slice the coriander stem and shallots and pick the herbs.
- To make the dressing, mix the fish sauce, sugar, coriander stems and 2 tbsp of toasted rice powder together. Season to taste with lime.
- Heat a large wok or frying pan over a medium heat and cook the mince in a tsp of cooking oil until just cooked through. No need to get a lot of colour here, you just want the pork nice and tender.
- Mix everything in a large mixing bowl and taste for seasoning. More fish sauce? Lime? Sugar?
- Plate up with steamed rice and lettuce leaves and top with more toasted rice and chilli.
- Wrap it up. If you want to up the calories just serve with some steamed rice!
