Ingredients

For the pork

  • 500 g 5% Pork Mince or pork shoulder steaks thinly sliced (Extra 200cals pp)
  • 1 onion finely sliced
  • 2 garlic cloves minced
  • 1 tbsp veg oil

For the sauce

  • 2 tbsp gochujang
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp mirin or sake
  • 1 tsp sesame oil
  • 3 tbsp water

To serve

  • 4 Spring onions

Sesame seeds

  • 300 g cooked sushi rice

Method

  1. Stir the gochujang, soy sauce, brown sugar, mirin, sesame oil, water and garlic together in a bowl and set aside. Slice the sliced onion. If using, finely slice the pork shoulder steaks.
  2. Cut the whites of the spring onions into 1inch pieces and slice the greens finely. Curl the greens up in some iced water (optional) before dressing in a tsp of rice vinegar and 1tsp of gochugaru.
  3. Heat a wide pan over medium-high heat and add the pork. Cook until the fat renders and the pork is deeply golden and slightly crisp. Add the onion and sliced spring onions and cook for another minute until softened.
  4. Pour in the sauce and toss to coat. Bring to a boil, then let it bubble and reduce until thick, glossy and clinging to the pork.
  5. Spoon hot rice into bowls and top with the spicy pork. Finish with the curled spring onions and a sprinkle of sesame seeds.
