  • 1 kg 5% Pork Mince
  • 6 Garlic Cloves
  • 8 Spring Onions
  • 2 tbsp Gochujang
  • 2 tbsp Gochugaru
  • 2 tbsp Dark Soy Sauce
  • 1 tbsp Rice Vinegar
  • 2 tbsp Vegetable Oil

Sesame Sauce

  • 120 g Tahini
  • 50 g White Miso
  • 40 g Rice Vinegar
  • 40 g Light Soy Sauce
  • 1 tsp MSG
  • 130 g Water

Herb Salad

  • 6 Baby Cucumbers (1 Large)
  • 1 Bunch Coriander
  • 1 handful Mint
  • 4 Portions of Noodz

Method

  1. In a mixing bowl, whisk together all the ingredients (except the water) until smooth and creamy. Slowly add the water until you’ve got a velvety sauce.
  2. Slice the cucumber and pick the herbs. Finely slice the spring onion greens. Toss everything together in a bowl. For an extra crunch and to help the salad last longer, pop it in some iced water.
  3. Combine all the ingredients for the pork (except the mince and oil) in a blender and blitz until smooth and fragrant.
  4. Heat a large frying pan over high heat. Once it’s hot, add 1 tbsp of vegetable oil and half the pork mince. Press the mince into the pan and let it brown on one side. After a few minutes, use a spatula to break it up. Once fully cooked, remove the pork and repeat with the remaining mince.
  5. Add all the cooked pork back into the pan and pour in the sauce. Stir well and cook for another 2-3 minutes, making sure everything is evenly coated.
  6. Divide the spicy pork between 4 containers. For freshness, keep the tahini miso sauce and herb salad in separate containers. Store everything in the fridge for up to 5 days.
  7. When it’s time to eat, cook your noodles according to the package instructions. Microwave the spicy pork until it’s nice and hot. Toss the noodles with a generous drizzle of tahini miso sauce, then top with the pork and fresh herb salad. Give everything a good mix and enjoy!
