  • 200 g Pork Mince
  • 1 tbsp Gochujang
  • 1 tsp Chilli Crisp
  • 1 tbsp diced Ginger
  • 1 tbsp minced Garlic
  • 1 tsp Gochugaru/Chili Flakes
  • 1 tsp MSG
  • 2 tbsp Mirin

Saucy bits

  • 1 tbsp White Sesame Paste/Tahini
  • 1 tbsp Peanut Butter
  • 1 tbsp Shiro Dashi
  • 1 tbsp Rice Vinegar (to Taste)
  • 1 tsp Mirin
  • 1 tsp Sugar
  • Soy Sauce to Taste

Salady bits

  • 1 Birds Eye Chili
  • 1 Spring Onion
  • Mint Leaves
  • Coriander Leaves
  • Noodz
  • Chili Oil to finish

Method

  1. Let's go. Boil some water. Mince your garlic, dice your ginger, and slice your spronions. Get a pan hot, throw in a tablespoon of oil, and get your pork mince in. Season with salt and break it up into bits. Once it's coloured with some crispy bits, deglaze with a few tablespoons of mirin and scape up all the good bits.
  2. Throw in your garlic and ginger and cook for a minute or so. You want the ginger to have some texture for a fragrant pop, so don't go crazy. Follow it up with your spicy bits, gochujang, chili crisp, chili flakes and msg. Cook it for a few minutes until all caramelised and homogenised. Get your noodz in the water.
  3. In a bowl, add your saucy bits and a slash of nood water. Whisk it up, taste it. Probably add more shiro dashi and vinegar. Add your noodz. Mix it up. Plate it. Top it with spicy pork, then the herbs. Then, the chili oil. Eat up.
