Ingredients

For the bowl

  • 260 g sweet potatoes
  • 2 tbsp good-quality mild taco seasoning
  • 150 g cherry tomatoes
  • 150 g iceberg lettuce
  • 2 tbsp pickled red onions
  • 5 g non-stick vegetable oil spray
  • 80 g Bettine goat’s cheese pearls (for whipping)

  1. 2 tbsp natural yoghurt (to loosen) Onken Natural Set
  2. Salt and pepper
  3. To finish
  4. 20g Bettine goat’s cheese pearls (whole)
  5. 30g hot honey
  6. Chilli flakes (optional)
  7. Peel and dice the sweet potato into small chunks. Spray with oil and season with salt and pepper.
  8. Cook in the air fryer at 200°C for 16–18 minutes until golden and soft. Alternatively, roast in the oven at 180°C for 30 minutes.
  9. Set a frying pan over a medium-high heat. Add the minced beef and cook for 6–7 minutes until browned and cooked through. Stir in the taco seasoning and a pinch of salt.
  10. Add the Bettine goat’s cheese pearls to a bowl with the yoghurt, a pinch of salt and pepper, and whip until smooth and creamy. Halve the cherry tomatoes and shred the iceberg lettuce.
  11. To plate, spoon the whipped goat’s cheese into the base of the bowl. Top with the roasted sweet potatoes and taco beef. Add the lettuce, tomatoes and pickled onions.
  12. Drizzle over the hot honey and finish with the remaining goat’s cheese pearls and a pinch of chilli flakes if you like heat.
